Egg and bacon recipes are one of the most convenient and nutritious combinations, and Dulse adds a perfect flavour hit.
We always recommend using organic whole foods such as organic free-range eggs and any organic bacon types. Many Aussie brands are actually American bacon so check the pack to see where your bacon comes from.
I prefer nitrate-free bacon as a healthy option, also ham or smoked chicken will work. Or go vegetarian and get creative with cheese and veggies.
Ingredients
One sheet ready rolled puff pastry
Four eggs
50g feta cheese
Leftover roast veggies, ham, bacon
Two teaspoons Dulse chopped finely - I use scissors.
How to make
Cut the pastry sheet into four equal squares and use them to line pie moulds, muffin tins or pie makers.
Beat eggs well in a jug.
Pop a bit of feta cheese, veggies, and bacon diced or bacon strips, in each pie. What you add here is up to you.
Pour egg over the veggies and fill to the top of the pastry.
Sprinkle Dulse on top.
Bake in a moderate oven until golden and puffy and the egg is set - about 20 minutes.
